How to Prepare:
Soak 1 c. chickpeas in 4 c. cold water overnight, or in hot water 1 hr. Drain and rinse. Put chickpeas in a pot of fresh water to cover 3 inches over chickpeas. (Optional: add a piece of kombu seaweed.) Bring to boil, cover, then simmer 2+ hrs. until tender. Season to taste.
