As seawater concentrates in the shallow ponds, large crystals form on the clay bottom. The art of the Paludiers is to collect as much salt as possible with the least amount of clay. With skill and strength, they hand harvest the salt with long rakes. It drips dry overnight, and is taken by wheelbarrow the next day to dry in
the sun. The soft crystals, laden with trace minerals, readily dissolve in cooking, adding a sweet, mellow aspect that complements any food.
