These tiny black lentils are indigenous to Syria. They cook quickly and are higher in amino acids than French, green or red lentils. Their mild flavor combines readily with other ingredients in soups and grain salads.
How to Prepare: Wash and drain 1 cup lentils. Add lentils, and a 1" piece of kombu to 2 cups water. Simmer 30 minutes. Season to taste.
