Bronze barley is a hulless variety, which refers to varieties of barley that thresh clean without losing their nutritious bran and germ. It was grown especially for Gold Mine Natural Food Co. Most common barley has a hull (skin) so tight, the germ and bran are bruised when the hull is removed (this is called “pearling”). Naked barley contains a whopping 15% protein and has the highest percentage of beta glucans (the cholesterol fighter) of any cereal grain.

How to Cook Bronze Barley:
- Combine 1 cup barley, 2 cups water, and a pinch of sea salt. Pressure cook 45-50 minutes. Remove from heat. Allow pressure to decrease before removing lid. If boiling, use 4 cups water and simmer 1 hour until water is absorbed. Presoaking grains up to 12 hours reduces cooking time and inceases digestibility. (Add salt after soaking, and cook in soaking water.)
