This "naked" light barley is excellent to eat as a whole grain or hot cereal; or grind into flour for baking. “Naked” refers to hulless varieties of barley that thresh clean without losing their nutritious bran and germ. Naked barley contains a whopping 15% protein and has the highest percentage of beta glucans (the cholesterol fighter) of any cereal grain.

How to Cook Golden Waxy Barley:
- Combine 1 cup barley, 1 1/2 cups water, and a pinch of sea salt. Pressure cook for 45-50 minutes. Remove from heat. Allow pressure to decrease before removing lid. If boiling, use 2 cups water and simmer for 1 hour. Presoaking grains for up to 12 hours beforehand reduces cooking time and increases digestibility. (Add sea salt after soaking, and cook in soaking water.)
